What are your family’s top 3 favorite meals?

Only three? Impossible. I need at least four, lol — we’re a multicultural household with multicultural appetites. So here are our top four family favourites:


1) Flesk og duppe (Norwegian comfort food)
This is as traditional as it gets in Norway: fried or boiled salted pork belly, served with potatoes and a creamy white sauce.
It started as a rural winter dish — practical, simple, and filling — but for me it’s pure nostalgia. I make mine a little differently and add sweet potato too.

2) Baked salmon with potatoes and white sauce
This one disappears fast in our house.
It’s easy, healthy, and tastes like the North — clean, simple, and perfect.

3) Greek Moussaka (my way)
A nod to my Greek heritage, but with a twist:
no eggplant — I make it with potatoes instead.
Fresh-baked bread and a salad on the side,
and the whole kitchen smells like home.


4) Ropa Vieja – Canary Islands style
This is one of our absolute favourites here in the islands:
a rich, hearty stew of shredded beef and chicken, chickpeas, tomatoes, and potatoes.
It’s so flavourful you almost always end up wanting a second bowl.
So yes… our table is a little bit Norwegian, a little bit Greek, and a little bit Canarian.
And somehow, that mix feels exactly like us.
